Scaled Horse Mackerel “Carapaus Alimados”
  • 5 clove(s) garlic (whole)
  • 2 sprig(s) parsley
  • 1 onion(s) (peeled and quartered)
  • 4 pinch of salt
  • 3 tablespoon(s) olive oil
  • 1 splash of extra virgin olive oil (to serve)
  • 1 kg Horse Mackerel (small)

After the mackarels are clean and without head, put them in a drainer, sprinkling Coarse sea salt in between each layers of fish. Next day, remove the salt and boil them 2 minutes. Replace the hot water by cold and fresh one. Take the skill and spine out. Season with sliced raw garlic and coriander, extra virgin olive oil and vinegar.  Cook some sweet potatoes to eat along or fresh tomato & oregano salad.
