Algarvian Clams “Conquilhas”
  • 5 clove(s) garlic (whole)
  • 1,2 kg Clams (Conquilhas)
  • 3 tablespoon(s) olive oil
  • 2 sprig(s) chopped parsley
  • 1 pinch of salt (for pasta water, to taste)
  • 2 Lemons

Wash the clams in cold water. Place them in a bowl and cover them with salt water until they open to eliminate any sand that may exist next to the edible part. Then wash the clams once again.
Take a pan and place in it the olive oil, put it on the flame, then chopped garlic, let them fry but not brown.

Add the clams, on the flame, cover the pan and let the clams cook for a few minutes. Until the clams are quite open…

When the time comes to serve this dish, sprinkle it with chopped parsley and lemon.
