Buy your favority oven fish and ask to keep the scales. Put a layer of coarse sea salt in a oven tray, place your fish and cover it again with another layer of coarse sea salt. Sprinkle with liquid sea salt and also eggwhite to close the struture. Heat the oen at 180ºC and let it cook for 20min each kg of fish. Once is done, remove the salt cover (should be like a rock) and enjoy your dish!
